Mini Shrimp Appetizers


This recipe was inspired by the Cook’s Country Shrimp Burger Recipe. The first time I made these I wasn’t convinced they would be good because the recipe was so simple. Now I make them all the time.


Ingredients:


2 cups fresh Shrimp - peeled, deveined, and cut into pieces

2 minced Scallions - white and green parts separated

¼ tsp Pepper

¼ tsp Salt

⅛ tsp Cayenne Pepper

1 cup Panko

3 table oil or ghee for frying



Method:


Place 1 cup of the cut-up shrimp into a food processor with the scallion whites, salt, pepper, and cayenne.


Pulse until you have a paste-like consistency. About 10 pulses.


Add in the rest of the shrimp, but only pulse a couple of times to combine. You want pieces of shrimp.


Remove from the food processor and mix in scallion greens.


Form small patties and coat them with the panko. Heat up oil in the pan, and then fry the mini shrimp burgers until golden brown.


These are delicious served as they are, but I like to serve them with a dipping sauce. Here are some ideas:

Soy Dipping Sauce

  • ¼ cup Soy Sauce

  • ¼ cup Rice Vinegar

  • 2 tsp Sesame Oil

  • ½ tsp Sriracha (optional)

  • Pinch of sugar

Marinara Sauce

Trader Joe's Red Thai Curry Sauce


Here's another unique idea, want to lighten up your brunch? Substitute these for sausage. It will definitely make for a special meal.
