I know many of you grew up with tomato soup and grilled cheese, but I didn't discover this delightful combination until well into adulthood. The benefit is that I didn't grow up with canned tomato soup. Instead, the tomato soups I've had have been creamy and soul-satisfying.
To remove the guilt from many of the recipes that call for cream to deliver that lusciousness,
this silky soup gets its creamy texture from canned beans, not cream, and it can be ready in under 30 minutes. Plus, it uses things you probably have in your pantry and chicken stock in your freezer. Yum.
