Simple Crustless Quiche

This simple quiche is something you can whip up for breakfast, brunch, lunch, and even dinner. It is hearty and served along with a salad, you have a perfect meal.

Serves 2


3 Eggs

1 cup Non-fat Greek Yogurt

1 tsp Flour

1/4 tsp Salt

Pinch of Pepper


Preheat the oven to 350 degrees Fahrenheit

Mix all of the ingredients in a bowl. The flour helps keep the Greek yogurt from separating.

Spray a baking pan with oil. Pour in the mixture.

Bake for about 25 minutes or until puffed and golden. Bring to the table and serve.


  • The tang from the yogurt gives the impression there are more ingredients in the quiche than yogurt and eggs.

  • You can add cheese to the mixture. I like Cheddar, Swiss, Feta, Gruyere, or Parmesan.

  • You can add any veggies to the mixture as well. Make sure they are already cooked, and drained of any excess liquid.

  • You can also add ham, sausage, bacon, or other meat.
