Hearty Vegetable Soup

Beginner

This is my go-to soup, especially when I need a reset after the Holidays. It is full of healthy vegetables, beans, and homemade chicken stock.


I've included my favorite vegetables in the recipe, but feel free to add your favorites. I've added peas, sweet potatoes, and other vegetables from the fridge.


You don't have to use the sausage or the Worcestershire sauce, but each adds a depth of flavor to the soup, helping to reduce the amount of sauce you use. More flavor, less salt. Love that!


If you are new to soup making, this is a perfect and grand soup to start with. You can't go wrong. All the vegetables go in together. Then you simmer with the stock. In the end, you have soup for a crowd, perfect for a family dinner or a group at lunch.
