If you need a quick, healthy soup for lunch or dinner, you can have this ready in less than 30 minutes.
1 tsp olive oil
1 small chopped onion
1-2 diced carrots
1 diced celery stalk
2 cloves garlic minced
1 tsp oregano
1 tsp thyme
1 - 28 oz can of diced tomatoes
3 cups of chicken stock
1 small (15 oz) can of small white beans
1 small (15 oz) can of kidney beans (optional)
1 cup elbow pasta
Salt & pepper to taste
Heat the olive oil in a saucepan. Add chopped onion, carrots, and celery. Cook until soft 2-3 minutes
Add garlic, oregano, thyme, salt & pepper. Stir and saute for 1 minute.
Add the rest of the ingredients. Simmer until the pasta is cooked. Adjust seasoning and serve. It is great with crusty bread.
