The best words to describe these ravioli are simple indulgence. Indulgence because they do take some time to make, but so worth the effort.
Ingredients:
Pasta:
2 cups Flour
2 Eggs
3-6 tbsp Water
Filling:
1 cup Ricotta
½ cup grated Parmesan cheese
1 tsp powdered Garlic
½ tsp salt
Pinch Pepper
Method:
Make the pasta by kneading all of the ingredients together. For details, check out the steps.
Mix the filling ingredients together.
Roll out the dough into a long strip. Place small teaspoons of filling about 2 inches apart on one side of the dough.
Fold the dough over the filling and press out any air around the filling while sealing the sides. Cut apart.
To cook: Add to boiling salted water, and cook until tender about 10 minutes.
Serve with your favorite sauce.
