I love soups like this. You can make it easily in under an hour and use common ingredients you have in the refrigerator. It may seem slightly complicated, but if you go step-by-step, you will find it easy to follow.
Additionally, you can use this same method to create soups with what you may have on hand. I will create a "Clean Out the Refrigerator" soup where I use whatever veggies I have in the refrigerator that need to be used and add them to the soup. I've even added leftover canned beans, tomato sauce, and roasted chicken. It is the method that stays the same.
