Weeknight Chicken Parm


Weeknight Chicken Parm | Appetite for Life

I love this recipe because it is so easy. I make my Oven Fried Chicken Cutlets over the weekend and have them ready to go in the refrigerator. Then when I'm ready to make this dinner, I can have it on the table in under 30 minutes.


Serves 2


Ingredients:

2 Oven Fried Chicken Cutlets

2 cups of your favorite Tomato Sauce

2 slices of Mozzarella or Provolone (or your favorite cheese - you can use shredded cheese as well)


Method:

Preheat your oven to 395 degrees Fahrenheit.


In a small baking dish, put 1 cup of the sauce on the bottom. Top with the chicken cutlets.


Add the rest of the sauce to the top of the chicken. Top with cheese.


Bake for 15 minutes until the sauce is bubbling and the cheese is fully melted.


Service with your favorite side dish or vegetable.


Notes:

Of course, you can serve this with pasta, but you don't have to. I like to put my chicken on top of my favorite lettuce mix. I love how the warm chicken wilts the cold lettuce just a bit. I will even through some fresh halved cherry tomatoes on the plate as nice contrast to the tomato sauce.


Other ideas include:

  • Steamed broccoli or other steamed veggie drizzled with some of the sauce if you'd like. I even like steaming an artichoke and eating it along with the sauce and chicken.

  • Sauteed zucchini or summer squash as they are or as zoodles

  • Rice or a grain like Farro

  • Couscous

  • As a sandwich!
