During the summer especially, I can get bored of regular salads. I like my salads to be interesting with different things in them, but hot nights don’t inspire my enthusiasm..


This Thai-Inspired Corn and Broccoli Salad was a surprise addition. When I was managing retail stores or spending long days running the front of house for busy restaurants, I learned the value of prep-ahead dishes that actually taste better the longer they sit. Traditional green salads wilt into sad, soggy pools within thirty minutes of meeting a dressing. But broccoli slaw? It’s an absolute powerhouse.


Here’s why this is so awesome. Broccoli stems are packed with sturdy cell walls containing cellulose. When you shred them into a slaw and toss them with a dressing rich in lime juice (citric acid) and fish sauce (salt), the tough fibers start to break down. 


The acid softens the crunch just enough to make it tender, while the salt draws out excess moisture, allowing the sweet brown sugar, fiery jalapeño, and fragrant basil and mint to penetrate deeply. It's a perfect blend of sweet, sour, and heat—the pillars of Southeast Asian flavor profiles.


Because this recipe serves 2 to 4 people, it is tailor-made for smaller households. You aren't stuck eating a giant trough of leftovers for a week straight. It's clean, intentional, and brings a burst of inspiration to your table.


Tip: The longer you let the salad sit, the less intense the jalapeño. After a couple of days, it is just a slight warmth in the background.  If you want to kick up the heat, but also let it sit for a bit, consider a spicier pepper such as serrano or the authentic bird’s eye chili.


Variations

  • The Protein Upgrade: Toss in a handful of grilled shrimp, cubed tofu, or shredded leftover rotisserie chicken to turn this refreshing side dish into a complete, light lunch or dinner.  I do this all the time!

  • The Nutty Crunch: Sprinkle a tablespoon of crushed roasted peanuts or toasted sesame seeds over the top right before serving to add an extra layer of savory depth. Don’t mix these in too early or they will lose their crunch. 

  • The All-In-The-Pantry Swap: If you don't keep fish sauce in your pantry, don't skip this recipe! You can easily capture that vital savory-tangy balance by using Worcestershire sauce (start with half the amount), or a 50/50 mix of soy sauce and rice wine vinegar.

How should I store leftovers?

Store any leftover salad in an airtight container in the refrigerator for up to 3 days. Because broccoli slaw is exceptionally sturdy, it won't get mushy like traditional greens.  If you mixed the fresh herbs in, they may darken slightly over time. For the best flavor experience, let it come to room temperature for a few minutes before eating.


Can I freeze this salad?

No.  While frozen corn works beautifully as a starting ingredient, freezing the fully assembled slaw will destroy the crisp cell structure of the raw broccoli, leaving you with a watery, limp mess once thawed.


My dressing tastes too intense. How do I fix it?

Taste your dressing before tossing it with the salad. If it is too salty from the fish sauce, balance it with a tiny pinch more brown sugar. If the lime juice feels too sharp, a teaspoon of neutral oil (like avocado or canola oil) can help mellow the acidity. Or if you are going to let the salad sit for more than a day, taste it before serving.  It will dramatically change from when it is freshly made.
