What you will need to make these Sourdough Brownie Bites


Ingredients (Shopping List)

  • Butter

  • Granulated Sugar

  • Brown Sugar

  • Unsweetened Cocoa Powder

  • Vanilla Extract

  • Salt

  • Espresso Powder (you can usually find this in the baking aisle)

  • Eggs

  • Sourdough Starter (unfed or discard works great!)

  • Baking Powder

  • Chocolate Chips

  • Peanut Butter Chips

Staring at a half-used jar of sourdough starter can feel like a chore when you aren't in the mood to bake two massive loaves of bread for a household of one. 


These Sourdough Brownies that I’ve made into Sourdough Brownie Bites are my favorite solution for using what I have on hand to create something small, indulgent, and effortlessly sophisticated.  I was inspired to make these while reading the super fudgey sourdough brownie recipe from King Arthur Baking.


The magic here lies in the "tang." In my cooking experiments and classes, travels, I've learned that the best flavors come from a balance of acidity and sweetness.


The sourdough starter provides a fermented depth that cuts right through the richness of the butter and cocoa. You don’t know exactly what it is, but it creates a fudgy, cravable treat…and it is using leftover starter! 


Not to worry if you don’t have sourdough starter on hand, you can mimic the flavor by using a bit of milk mixed with apple cider vinegar, and adding a bit of flour.


A Little History: Brownies Happy Accidents

The brownie itself is a thoroughly American invention, believed to have first appeared in the late 1800s. One popular story credits the Palmer House Hotel in Chicago, where Bertha Palmer reportedly requested a dessert that could be tucked into a box lunch for ladies attending the 1893 World’s Columbian Exposition. Whether or not that’s entirely true, the brownie quickly became one of the most beloved baked treats in the country.


Why This Recipe for Sourdough Brownie Bites Works

The addition of espresso powder is a classic trick I picked up from Ina Garten. It doesn't make the brownies taste like coffee, but it intensifies the chocolate to a whole new level. 


Adding the chocolate chips to the brownies adds a different chocolate flavor. I like adding the peanut butter chips because I think they are scrumptious in this recipe, but you can always leave them out. 


The sourdough starter acts as the secret ingredient that keeps the crumb moist and tender. You don’t add any other flour than what is in the starter.  Perfect when you want to whip something up but don’t have a lot of flour on hand.


Variations

  • The "No-Starter" Shortcut: If your starter isn't ready, you can mimic that signature tang by mixing 1/2 cup milk plus 2 tablespoons with 1/2 teaspoon apple cider vinegar and letting it curdle before adding ¼ cup flour.

  • Nutty Crunch: Swap the peanut butter chips for chopped walnuts or pecans for a more traditional texture.

  • Sweet & Salty: Sprinkle a pinch of flaky sea salt on top right after baking.

How should I store these sourdough brownie bites? 

You can keep these brownies in an airtight container on the counter for up to 3 days. For longer storage, they stay fresh in the refrigerator for about a week.


Can I freeze the Sourdough Brownie Bites?

Absolutely! Wrap individually tightly in parchment paper and then foil. They will stay delicious in the freezer for up to 3 months. Just thaw one at a time when the craving hits!  You can also use a freezer bag if that’s easier and you are going to eat them sooner.


What if I don't have espresso powder? 

You can omit it, but if you have instant coffee granules, those work as a fine substitute to help deepen the chocolate flavor.


How do I know when they are perfectly baked? 

Check them at 15 minutes. You are looking for set edges and a top that looks dry, shiny, and slightly cracked. A toothpick inserted in the center should come out with a few moist crumbs, but not wet batter.  These bake quickly in the mini muffin tins, so check them at 10 minutes and stay close.
