There are days when I just want a peanut butter cookie. When I was making cookies for office friends with different dietary requirements, I came up with this Gluten-Free Peanut Butter Cookie recipe…and it is delicious.


What’s best about these cookies and this recipe is that they make a small batch, so you aren’t staring at a recipe that yields five dozen cookies.  And second, if you make these for a group where some people are gluten-free, and others are not, everyone will enjoy them.  Win, win, win.


Besides that, I love that I can roll these into balls and freeze them. Instead of baking all 24 at once, I can pop two into the oven while I’m tidying up dinner, and by the time I’ve settled in with a book or my current crochet project, I have warm, fresh cookies without a mountain of leftovers or dishes. It’s a small luxury that fits a healthier, more intentional lifestyle.


Why do these ingredients and recipe work so well?

Using a "measure for measure" gluten-free flour ensures you get that classic cookie texture without the grittiness sometimes found in GF baking. The combination of granulated and brown sugar provides that essential chewiness and deep flavor we all crave in a peanut butter cookie. Once baked and cooled on a wire rack, you can keep them in an airtight container on the counter for up to 3 days. For longer storage, they stay fresh in the refrigerator for about a week.


Can I freeze the dough? 

Yes! This is my favorite hack. Form the dough into balls and freeze them on a tray. Once frozen solid, transfer them to a freezer bag. You can bake them straight from the freezer—just add a minute or two to the baking time.


What is the best temperature for baking? 

Preheat your oven to 350°F. You’re looking for the cookies to be just slightly brown on the bottom, which usually takes 10-12 minutes.


Can I use regular flour? 

While this recipe is optimized for gluten-free "measure for measure" flour, you can typically swap it for all-purpose flour if you don't have a gluten sensitivity.
