"Crunchy" Carrots

Crunchy Carrots

These Crunchy Carrots aren't exactly "crunchy" but that was what my Mom called them when she first made them for us because they weren't "mushy" and we hated mushy carrots 😂. Mom's are great like that, right?


These couldn't be easier to make and don't take long at all. You can adjust the amount of carrots depending on how many you are serving.


For 2, here's what I would use for the ingredients:

  • 4 Carrots cut into strips

  • 1 tablespoon Butter - I like the flavor butter brings, but you could use ghee or any other oil of your choice.

  • 1 small Onion, cut into strips

  • 1 Knorr Chicken Bouillion cube or I teaspoon Chicken Better Than Bouillon


Method:

Sauté the onions in the butter until they are soft.

Add the carrots and the bouillion cube or Better Than Bouillon

Stir to combine and then cover to steam the carrots.

Check and stir frequently so nothing burns. Keep the heat on medium to medium low. If you do so you shouldn't need to add any water.

Cook the carrots until your preferred doneness.


As you can see in the picture, I used the multi-colored carrots from Trader Joe's. I love them because they add so much vibrancy to the dish. This also makes them perfect for a holiday meal. Additionally, if you don't over cook them, they keep their color.


Give these Crunchy Carrots a try for a quick dinner side dish or for a crowd. I've been making them for over 30 years and will keep making them!
