The inspiration for these Spinach and Feta Turkey Burgers comes from the classic Greek Spanakopita, a dish I fell in love with when running a bakery back in the 90’s.
I wanted to see if that same flavor profile would work in a burger. Originally, I started with a beef burger, but the subtle flavors of dill and even the feta became lost.
Then I thought turkey might work. Ground turkey is more "blank canvas" flavor-wise, but it can be dry when making burgers if you aren’t thinking ahead. By folding in thawed spinach and a dollop of Greek yogurt, I've found the secret to a burger that stays incredibly moist.
Additionally, the dill and the oregano came through just at the finish of a bite as a wonderful surprise. I loved it.
This burger is great as is, but I can also see it with a tzatziki sauce. That would be amazing. What is also great is that these burgers really hold their shape. They puff up slightly, but not as bad as a beef burger, so you can make them thinner, and even serve them with the fixings for a Gyro in a pita!
One of the best things about this recipe for those of us cooking for one or two is how beautifully they freeze. I usually make the full batch of four, eat one that night, and tuck the others away. It gives me the freedom to head out for a last-minute food adventure with friends, knowing I have a healthy, homemade "fast food" option waiting in my freezer for tomorrow.
Variations
The Burger Bowl: Skip the bun and serve the patty over a bed of cucumbers, tomatoes, and kalamata olives for a lower-carb "Mezze" bowl.
Turkey Sliders (or even meatballs - my next version): Form the mixture into smaller patties for a fun appetizer or a lighter lunch.
