When I’m looking for a meal that feels like a warm hug on a chilly evening, I turn to Chicken Cacciatore - when I remember which is silly because it has the most basic ingredients. When I cook it, I’m so satisfied, and I typically ask myself, “Why haven’t I made this in so long?”  


In Italian, cacciatore means "hunter," and this “hunter-style” stew traces its history back to the Renaissance. Originally, it was a rustic, one-pot meal prepared by hunters using wild game, forest herbs, and whatever vegetables were in season.


My version of Chicken Caccitore focuses on a vibrant, pepper-forward profile that brings a sophisticated sweetness to the savory braised chicken. It’s a healthy, Mediterranean-style dinner that feels like a special occasion but is simple enough for any weeknight.


A Pepper-Focused Twist (Mushrooms Optional)

Unlike many versions that rely on a heavy tomato puree, this recipe celebrates the bell pepper. By simmering red and greenpeppers until they are tender and silky, we create a light yet deeply flavorful sauce.


While my signature version is focused on the peppers, this dish is incredibly versatile.
