Eggs Benedict is the ultimate "treat yourself" breakfast or brunch that is surprisingly easy to make for one or two. This dish feels incredibly sophisticated, but it really only requires a few high-quality staples that you likely already have in your fridge. It’s the perfect marriage of textures: the crunch of the toasted muffin, the saltiness of the ham, the velvet of the egg, and the zing of the hollandaise.


Where Did Eggs Benedict Come From?

It is kind of hard to track down. Ultimately, all stories center around New York City.  Some stories say that Lemuel Benedict, a retired stockbroker, asked for something like this to be made at the Waldorf Hotel in 1894.  Even earlier, Delmonico’s claims they have had it on the menu since 1860, and one of their chef’s published a version in a cookbook in 1894.

Why You Should Try Making Eggs Benedict

The beauty of Eggs Benedict lies in its versatility. If you're watching your sodium, you can easily swap the ham for fresh spinach or tomato. If you're feeling adventurous after a trip abroad, you can use smoked salmon for a "Royale" twist. It uses poaching—a water-based cooking method—which is a fantastic way to keep your meals light and healthy without sacrificing that "runny yolk" satisfaction.


Oh, and the Hollandaise.  Don’t be afraid.  Yes, it is rich, but you only have a bit drizzled over the top of the eggs.  It just brings the whole thing together.


Make It Your Own

Don't feel boxed in by the traditional English muffin! Depending on what I have in my pantry to avoid a mid-week grocery run, I’ve used:

  • Chesapeake Style: Swap the ham for a crab cake.

  • Cochon Style: Use leftover pulled pork.

  • Base Swaps: Try a biscuit, a slice of polenta, or even thick, crusty bread.

  • Fresh Additions: I love adding a slice of tomato or some creamy avocado to boost the nutrients.

How long does Hollandaise sauce last? 

Hollandaise is best served immediately for both safety and texture. If you must keep it, hold it in a warm (not hot) spot for no more than 1–2 hours. It does not freeze well as the emulsion will break.


Can I poach eggs in advance?

Yes! You can poach eggs slightly under, store them in a bowl of cold water in the refrigerator for up to 2 days, and "reheat" them by dropping them in hot water for 60 seconds before serving.


What is the best temperature for poaching eggs? 

The water should be at a "shimmer" (about 180°F to 190°F), not a rolling boil, to keep the whites from feathering too much.


Can I substitute the ham? 

Absolutely. You can use Canadian bacon, smoked salmon (Royale), or even cooked spinach (Florentine) for a vegetarian-friendly version.
