Kale, Bean and Andouille Soup

As the weather turns chilly, is there anything more comforting than a warm bowl of soup? I think not! Today, I’m sharing a delicious and simple recipe for Kale, Bean, and Andouille Soup that is absolutely perfect for a busy weeknight.
What I love about this soup is how easily it can be customized. While the smoky Andouille sausage provides amazing flavor, you can certainly swap it out for Chorizo, Kielbasa, or even Italian Sausage.
The possibilities don't stop there! If you want to make it even heartier, you can toss in some additions like tomatoes, zucchini, or winter squash like butternut. You can also control the "soupiness"—if you love a lot of broth, add more stock, but if you prefer a more substantial soup, just use less.
A little tip: if you are using the 3-2-1 Meal Plan and have leftovers of butternut squash, kale, and beans, you can use them to make this soup. Just add sausage (or not), and it is delicious. Serve it up with some whole wheat soda bread, and you have a complete, cozy meal.
