I’ll be honest: this dish isn’t exactly a "looker." It’s very rustic, a bit messy, and won’t be winning any beauty pageants anytime soon. 


But I have lots of dishes that don’t look great, but are absolutely delicious. This Italian Green Bean Casserole is my go-to when I need something incredibly easy, deeply comforting, and reliable for those chaotic weeknights.  And let’s face it, not all dishes are beautiful.  I’m sure some of your family's favorites aren’t photo-ready. (Do you know how long it took to get a picture that was halfway decent for this? Ugh!)


It’s a fun departure from the traditional creamy bean casseroles we see at holidays. By using a tomato sauce base, you get a dish that feels lighter yet satisfyingly savory.

  • The Sauce: A simple tomato sauce creates the body of the dish. It mellows out and sweetens slightly as it bakes with the beans. Just use your favorite, and honestly, if your jar is bigger than 16 oz, that is totally fine.


  • Homemade Croutons: This is my "secret" tip. Cubing up stale bread and seasoning it with garlic powder, thyme, and olive oil elevates the whole experience.  The croutons become part of the dish and make it a full meal rather than just a side dish.

Yes! You can freeze the bean and sauce mixture for up to 2 months. However, wait to add the croutons until you are ready to bake and serve; they will become soggy. I would also recommend not adding the cream if you intend to freeze it, because sometimes the cream will split when reheated.

What is the best way to reheat the Italian Green Bean Casserole?

To keep the croutons from getting too soft, reheat leftovers in the oven at 350°F until warmed through. A microwave works in a pinch, but the topping will lose its crunch.

Can I use store-bought croutons?

Absolutely. While I love the texture of big, homemade bread cubes, store-bought croutons are a great time-saver for those extra-busy nights.

What if I don't have a Dutch oven?

No problem! Any deep 9x13 baking dish will work. Just be sure to cover it tightly with foil during the first 40 minutes of baking to keep the moisture in.
