Grilled Asparagus & Mushrooms with Feta

This simple dish is a great way to highlight these two ingredients. I love serving it rustic style like in the photo, or you can make it more elegant by serving individual portions and cutting the mushrooms slightly thinner.


What makes this so delicious (and addicting) is a couple of things. First, the char on the veggies, especially the asparagus. To die for!


Next is the salt mixture. As I mention in the notes, I like to muddle them in my mortar to create a sauce to drizzle over the veggies. It really makes the dish pop, but I know not all of you have a mortar and pestle. That's why I suggested at least mixing them together instead of adding them separately.


Finally, the mushrooms really add that umami and meaty texture to the dish. You really don't need more than the veggies and feta. Surprisingly, you don't need a lot of feta to make a difference either. I like to crumble my own because I find it creamier. Enjoy!
