Between March and June, you can find locally grown asparagus at farmstands, grocery stores, and specialty markets. You may even be able to find white asparagus, which is a treat. Asparagus will keep in the fridge for 5-7 days, but you want to use it before the heads of the asparagus begin to open. If your asparagus becomes limp, pop it into a cup of water to refresh it.
