There’s nothing I like better than a meal that basically comes together in one skillet. That's why I love making this lemon chicken, asparagus, and pesto dinner, especially in the spring. Ok, you cook the rice separately, but stick with me here.
Cooking everything in one pan makes the cooking process easy; you can control portions, and clean up isn’t a hassle with a bunch of pots and pans. This was a lesson I learned cooking in my new kitchen, where you cannot have a buildup of prep dishes because it just isn’t big enough.
I also love that sautéing everything in one hot pan creates the most delicious sauce. It is the sizzle that makes things happen.
That sizzle not only makes sure the food doesn’t stick, but the sauce I mentioned comes from the little bits stuck on the bottom that are full of flavor.
In this recipe, I use the juice of a fresh lemon to "deglaze" the pan. This isn't just a fancy term; it’s chemistry. The acidity of the lemon dissolves the caramelized bits, which are the proteins stuck on the bottom or the fond, incorporating that deep, savory flavor back into a bright, citrusy sauce that coats the asparagus. It reminds me so much of the bright, clean flavors I encountered during my time in the French Alps—simple ingredients treated with technical respect.

The Grain Swap: If you’re not in the mood for rice, serve the finished chicken and asparagus with a high-quality fusilli or farfalle. The grooves in the pasta are perfect for catching the pesto.
Low-Carb Style: Skip the grains entirely and serve this over a heap of fresh arugula or mixed greens. The heat from the chicken will slightly wilt the greens, creating a warm salad. This is one of my favorite ways to eat this dish!
Extra Zest: For a more intense citrus profile, grate the zest of half the lemon into the pesto before stirring it in.

The most reliable method is using an internal meat thermometer. You are looking for a temperature of 165°F. Cooking by time alone is tricky because the thickness of chicken breasts varies so much.
Can I freeze the leftovers?
While you can freeze the cooked chicken, I don’t recommend freezing the asparagus. Asparagus has a high water content, and the cell walls collapse when frozen, resulting in a mushy texture once thawed. This dish is best enjoyed fresh! So cook what you need.
Why did my rice turn out mushy?
Rice can be tricky if you don’t cook it often. Too much water for the type of rice leads to mushy, overcooked rice.
If you aren't comfortable with the absorption method, try cooking the rice like pasta in a large pot of boiling salted water. Start checking it at 10 minutes, and as soon as it's tender to the bite, strain it immediately.
