A Lesson in Steam: The Secret to the Perfect Snap

During my time shopping in Borough Market with the chefs from The Rubens at the Palace, I learned that the best vegetable dishes aren't just about heat; they are about controlling moisture. For a long time, I struggled with green beans—they were either squeaky and raw or grey and mushy.


This recipe uses a technique inspired by the way I’ve seen traditional Asian dumplings prepared. It’s a two-stage process: a hard sear followed by a "steam-fry." By adding water and soy sauce and immediately covering the pan, you create an enclosed environment where the steam cooks the interior of the bean while the soy sauce totally infuses every bean rather than just covering it on the outside.


As you remove the lid and let the liquid evaporate, the soy sauce and spices concentrate into a glaze. I always recommend low-sodium soy sauce because, as that water disappears, the salt stays behind. If you use full-sodium soy or dark soy, the final dish might be unpleasantly salty. 


Chinese five spice powder itself is a fascinating blend, typically consisting of star anise, cloves, Chinese cinnamon, Sichuan pepper, and fennel seeds, providing a complex warmth that elevates the humble bean to something truly "special". 


I know you may be leery about buying a spice that you may not use often.  I was, too.  As a matter of fact, I had my first bottle of Chinese five spice powder for years after buying it to make ramen, but not knowing what to do with it afterward.  Here’s a secret: adding it to many Asian dishes gives the dish that special flavor that you don’t even realize is missing.  I started adding it to most of my Asian dishes, and it makes them much better, deeper in flavor, and gives you something that you can’t quite put your finger on, but you like.


Variations

  • The Nutty Crunch: Sprinkle a tablespoon of toasted sesame seeds over the beans just before serving for added texture.

  • The Ginger Twist: Add one teaspoon of freshly grated ginger at the same time you add the garlic for a brighter, more pungent aromatic profile.

  • Mushroom Umami: Sauté a handful of sliced shiitake mushrooms along with the green beans at the start to add an earthy depth to the dish.  This is so good and adds a “meaty” texture to the dish.

Can I use frozen green beans instead of fresh? 

Yes, you certainly can. Just be aware that frozen beans may release a bit more water initially, so you might need an extra minute of sautéing at the start to get that initial browning.


What is Five Spice Powder exactly? 

It is a traditional Chinese spice blend that hits all five taste profiles: sweet, sour, bitter, salty, and umami. It usually contains star anise, fennel, peppercorns, cloves, and cinnamon.


How do I store my five spice green bean leftovers?

These beans store well in an airtight container in the refrigerator for up to 3 days. To reheat, toss them back into a hot skillet for a minute, or even easier, microwave them for a minute, and you have dinner ready.  


What if I don't have five spice powder?

You can make the recipe without it! The garlic and soy sauce will still provide great flavor, though the five spices add a unique complexity.


Why do you recommend low-sodium soy sauce?

Because the liquid is reduced at the end of the cooking process, the salt concentration increases. Using low-sodium soy sauce prevents the dish from becoming too salty.


Why did my garlic burn? 

Garlic has a high sugar content and burns quickly. Ensure you only cook the garlic and dry spices for about 1 minute before adding the liquid to stop the browning process.
