Chickpea soup is something new to me as I explore different beans, but I learned that it is a dish enjoyed around the world. It is a testament to the versatility and nutritional power of the humble chickpea. This hearty and flavorful soup boasts a rich history, diverse variations, and a plethora of health benefits. I can’t wait to try all of these different variations. The wonderful thing about chickpea soup, at least for me, is that certainly, you can make this for a crowd, but the general recipe feeds 4, or if you are cooking for 1 or 2, that is only a couple of meals during the week so nothing goes to waste.
