Apple Cider Bread Pudding

I'm not always a fan of sweet bread puddings because I find them bland and too mushy.
So I sought to create a recipe that was full of warming flavors that could help me use up leftover bread from all of my bread experiments. Thus, this Apple Cider Bread Pudding was born.
It was inspired by my Baked French Toast recipe. The apple and cider, however, are the keys. They add a freshness and depth of flavor that had been missing in other recipes I tried.
I use leftover sweet yeasted breads for this because again, they bring something to the party. You could certainly use leftover sourdough bread or any crusty bread. It will be just as delicious without the extra bonus of the sweet bread. My first attempt was with some leftover cranberry walnut bread, and I was hooked from there.
