Wheat and Honey Orange Shortcakes

There is something quintessential about a Strawberry Shortcake. I love the traditional with fresh sweet ripe strawberries and the slightly savory biscuit or shortcake, all topped with luscious whipped cream.


I wanted to experiment with using whole wheat or white wheat as the flour, which led me down this exciting path and to this absolutely delicious invention - Wheat and Honey Orange Shortcakes.


The texture is delightful and lighter than you would imagine using wheat flour. The secret is buttermilk and eggs. Most shortcakes have one or the other. Adding the orange zest was a touch of genius, if I do say.


These are perfect for strawberry shortcakes, but I've also made them to eat on their own. They are perfect as is with a cup of coffee or tea in the afternoon. Give them a try.
