Mom's Turkey Meatloaf


This was the only meatloaf I knew growing up. It is so 70’s but I still find it delicious and heartily satisfying. I always have the ingredients handy (turkey in the freezer of course) for a quick weeknight dinner.

 

Ingredients:

1 pound Ground Turkey

1 egg

3 cups Rice Crispies

1 packet Lipton Soup Mix


Method:


Preheat the oven to 350℉


Mix all of the ingredients together.


Form into a loaf shape on a parchment-lined baking sheet, or in a loaf pan.


Bake for about 30 minutes.


Serve hot or cold.



Notes: The Rice Crispies are the surprising twist. They are the perfect binder because they don't make the meatloaf heavy. We don't use tomato sauce or ketchup to cover the meatloaf but feel free if that is how you make it.


Of course, when Mom made this it was with beef because we didn't have ground turkey so that works well too, but I prefer ground turkey.
