Forget your grandma's chicken noodle soup. Okay, maybe don't forget it, but definitely make some room in your recipe repertoire for its bright, zesty cousin: Lemon Chicken Soup with Barley. This soup is like a burst of sunshine on a cloudy day, and it's quickly become my go-to comfort food.


It is based on a Greek Lemon Chicken Soup, but adding the barley adds another dimension, making it heartier for chilly evenings.

Delicious and light. If you don't like a strong lemon flavor, start with 1/4 cup of lemon juice and then increase from there.
