Spanish Lentil Stew

I love lentils, and was thrilled to find that in Spain this is a traditional stew called Lentejas.

One reason I love lentils is because they are light but hearty. Did you know that lentils not only have a supply of nutrients, but are protein-rich? They are a perfect meat substitute that makes a delicious soup or in this case stew.

You will see I use regular potatoes in this dish, and they are yummy. I was also thinking that sweet potatoes or butternut squash would be delicious. I started with the traditional recipe and will experiment more.
