Sausage, Peppers, and Onions

There are some smells that just scream "weekend" to me, and sizzling sausage, peppers, and onions are definitely one of them. It brings back memories of backyard BBQs, street fairs, and strolling through Fenway in Boston during a Red Sox game. It's a simple dish, but the flavors are so comforting and familiar that it feels like a warm hug on a plate.

While this dish is a staple at American cookouts and carnivals, its roots are undeniably Italian. It's a classic example of "cucina povera," or "poor kitchen" cooking, where simple, affordable ingredients are transformed into something delicious. Italian immigrants brought this beloved combination with them to the United States, and it quickly became a staple, especially in cities like New York and Boston. The sweet Italian sausage, often made with pork, fennel, and garlic, pairs beautifully with the natural sweetness of bell peppers and the savory bite of onions. It's a perfect harmony of flavors.

One of the best things about this dish is how versatile it is. While the classic combination of sweet Italian sausage, green bell peppers, and yellow onions is a winner, you can really make it your own. I love using a mix of red, yellow, and orange bell peppers to add a pop of color and a different kind of sweetness. And don't even get me started on the sausage! If you like a little heat, hot Italian sausage is a fantastic choice. Or, if you're feeling adventurous, try a chicken or turkey sausage for a lighter take. I love using the Oktoberfest sausages from Walden Local. They are seasonal, and I can't wait until they are released every year. I've even made it with a smoky andouille sausage, and while it's a departure from the original, it's absolutely delicious.
This is more of a method than a specific recipe. Here's how I plan it:
1-2 sausages per person - cut into 1-inch pieces.
1 sliced onion per 2 sausages
1 sliced green bell pepper per 2 sausages
Salt & Pepper to taste - note: you may not need any if the sausages are highly seasoned.
1 tablespoon Olive Oil
Begin by cooking the onions and peppers. Once soft, add the sausages and cook until they are completely cooked. This will only take about 5 minutes, and you could make this dish in about 15 minutes.
As for serving, the possibilities are endless. It's most commonly served on a sub roll, but I also love it piled on a bed of polenta or studded with gnocchi. You can also toss it with pasta for a hearty meal, add some tomatoes, and you have a delicious family dinner. It’s perfect for a casual weeknight dinner or for feeding a crowd at a party. No matter how you serve it, this dish is sure to be a hit.
