My Busy Weeknight Saving Grace

When I’ve had a busy day, I don’t want to pull out all the pots and pans to cook a healthy yet comforting meal. In these moments, I’ll default to something simple like pasta, yogurt mixed with cereal, a sandwich, or even cheese and crackers.

This dish is a nod to Pollo alla Cacciatora (Hunter-style chicken), a traditional Italian rustic stew. While the classic often simmers for hours in the oven, this version keeps those deep, earthy flavors of garlic, peppers, and tomatoes but gets you to the table in about 60 minutes, and you cook everything in one pan on the stovetop (thus the name). Perfecto!


The chicken stays juicy because it simmers right in the tomato and stock base. Plus, it’s incredibly versatile—you can serve it over rice, pasta, or even just a bed of fresh greens for a lighter touch.


Ingredient Spotlights

  • The Chicken: You can use boneless breasts or thighs here. Thighs are my personal favorite for this recipe because they are so forgiving and stay extra succulent during the simmer. They do take a bit longer to cook, so if you are truly looking for a fast weeknight meal, go the chicken breast route.


  • Fresh Basil: Don’t skip the fresh leaves! Adding them at the very end preserves that bright, peppery aroma that defines Italian cooking.


  • Green Beans: These add a wonderful snap and soak up all that delicious "pot liquor" from the tomatoes and chicken stock.


Variations

  • Add Artichokes: Toss in a jar of drained, marinated artichoke hearts at the same time you add the peppers and green beans. Because I’m not a fan of marinated artichoke hearts, I add frozen and they work wonderfully. 

  • Add Some Brine: For a salty kick, toss in a handful of capers or halved Kalamata olives when you add the tomatoes.

  • Make it Creamy: Stir in a splash of heavy cream or a dollop of mascarpone at the end for a richer, velvet-like sauce.
