Crispy Artichoke Hearts & Garlic


My sister and I had these artichokes at a Tapas Restaurant. Ever since, they are a go to appetizer when we get together, because they are perfect for snacking on with a glass of wine while chatting.


 

Ingredients:

1 bag frozen Artichoke Hearts

3 Tablespoons Olive Oil

1-2 Tablespoons Dried Minced Garlic

Salt

Pinch of cayenne pepper (optional)


Method:

Heat your oven to 395℉


Add the frozen artichoke hearts to an oven-proof baking dish, preferably something you could serve in. Cover with 2 tablespoons of olive oil and mix, making sure to cover completely.


Cook for about 15-20 minutes until brown on the bottom. Take them out and stir to flip them over. Sprinkle with the dried minced garlic and the remaining tablespoon of olive oil. Sprinkle with salt.


Cook for another 15-20 minutes until crispy. It might take a little longer depending on your oven. In the last 5 minutes, mix them around to ensure over all browning.


Take out and add a bit more salt if needed and serve.


Note: The best frozen artichoke hearts for this recipe are from Trader Joe's. You can check your regular grocery store for frozen artichoke hearts, but they may be in a block rather than a bag.


If you can't find frozen, you could use artichoke hearts packed in oil, but not marinated. If you use artichokes in oil, do not use the olive oil.
