Chicken Red Thai Curry

I love the smell and the simmering sounds of a curry bubbling away on the stove. It just fills the house with warm comfort.
Don't be intimidated by this Chicken Red Thai Curry because it is an easy weeknight meal or a fun Friday night feast. Everything comes together in about 30 minutes.
Make this your own by using the vegetables you love. I recommend one of the small bags of prepared vegetables because it makes it super easy and you can have it on hand, but if you have favorite veggies, by all means use them. Broccoli, green beans, snap peas, carrots, and even cabbage work well in this curry, whether or not they are traditional.
You will also notice my Chicken Red Thai Curry is rather thick. That is the way I like it, but if you'd rather more sauce, feel free to reduce the amount of vegetables.
