Cheese Grits Casserole


This bubbling dish of deliciousness is decadent, but oh so good, and easy to put together. After the first spoonful, you will want to come back for more. A similar grits casserole was my first introduction to grits many years ago and I haven’t looked back since.


Ingredients:


4 cups water or chicken stock (vegetable stock will work well also)

1 tsp Salt - if not using stock

1 cup Old-fashioned Grits

2 cups Grated Cheddar Cheese

½ cup Milk

¼ cup Butter

2 beaten Eggs

1 Tbsp Worcestershire Sauce

⅛ tsp Cayenne Pepper

Salt & Pepper to taste


Method:


Preheat the oven to 350℉


Cook the grits by adding them to the boiling water or stock, reducing the heat, and stirring constantly for 10 minutes.


Once cooked, add the remaining ingredients off the heat and stir to combine.


Pour into a buttered 9x13 baking dish and bake for 20-30 minutes until bubbling and golden on top.


Take out of the oven and let sit for 10 minutes before serving.


Notes:


Like the variations mentioned in the basic Cheese Grits recipe, you can add what you like to this casserole. A southern staple is breakfast sausage.


This casserole is great as leftovers and retains its creamy texture when reheated.
