Quick Meals for Two: Simple, Speedy, and Scrumptious
When I say quick meals for two, I mean dishes that come together in under an hour. No fancy ingredients, no complicated steps—just good food that feels like a hug on a plate. Here are some of my go-to ideas:
Chicken with mushrooms and tomatoes: Brown chicken thighs in an oven-proof pan. Take it out of the pan and then sauté mushrooms, onion, garlic, and thyme until soft. Add chicken stock and canned tomatoes. Bring to a simmer. Add the chicken back to the pan. Cover and cook at 300°F for 30-40 minutes. Minimal cleanup, maximum flavor.
Chicken or Shrimp stir-fry: Sauté strips of chicken breast or shrimp with onions, garlic, ginger, celery, carrots, bell peppers, snap peas. Add a splash of soy sauce. Serve over rice or noodles. It’s colorful, fresh, and done before you know it.
Spaghetti carbonara: This classic Italian dish is a lifesaver (and a bowl full of comfort). Cook spaghetti. While the pasta cooks, satué bacon in a large pan. On the side, mix together eggs, Parmesan cheese, salt & pepper. Once the pasta is cooked, add it to the bacon, toss to coat. Then quickly stir the pasta while pouring in the eggs & cheese. Continue to stir to create a sauce. You can add some pasta water if it gets thick. Then dinner is served in 15 minutes tops.
These meals are perfect for those nights when you want something homemade but don’t want to spend hours cooking. Plus, they’re easy to scale up or down depending on your appetite.
Why Cooking for Two Can Be a Challenge (And How to Beat It)
Cooking for two is a bit of an art. You want enough food to feel satisfied but not so much that you’re stuck with leftovers for days. And let’s be real—sometimes recipes are designed for eight or more, which means dividing ingredients or guessing measurements.
Here’s what I’ve learned to make it easier to cook meals for two:
Use smaller pans and pots: Put two chicken breasts in a large skillet, and the juice evaporates leaving them dry. Use an 8 inch skillet, and the juices are trapped and keep the chicken moist.
Plan for leftovers smartly: Sometimes leftovers are a blessing. I like to make a little extra and turn it into lunch the next day. But if you’re not into that, try recipes that don’t reheat well, like fresh salads or stir-fries.
Embrace versatile ingredients: Things like canned beans, frozen veggies, and quick-cooking grains are your friends. They save time and reduce waste.
Batch prep basics: Cook a big batch of rice or quinoa on the weekend and use it throughout the week. It’s a game-changer.
Stock the pantry: A well-stocked pantry is your best friend. That way you can buy just a few ingredients each week, and use your pantry to make them come to life.
By thinking ahead and choosing recipes designed for two, you can avoid the “too much food” trap and enjoy fresh, tasty meals every night.
