Sweet Potato Hash


I love scrambles and hashes for a Sunday morning brunch. This sweet potato hash makes the most of smoky bacon combined with the roasted sweet potatoes. Adding onions, peppers, and anything else you have in the fridge makes this a perfect way to use up leftovers.
Best of all, you can make the amount you need. If you are only cooking for one or two, then cook a smaller batch. If you have a crowd, add more potatoes and veggies.

Why This Recipe for Sweet Potato Hash Works
Potatoes are pre-roasted: You can certainly make this with raw sweet potatoes, but if you have pre-roasted sweet potatoes, this takes just a few minutes to pull together (and gets crispy)
Zero Waste: Use up whatever you have in the refrigerator for this hash. If you don't have bacon, sausage, ground turkey, or even shredded pork will do nicely.
Substitutions & Variations
Cooking should always fit what you have on hand.
Spice it up: Sweet potatoes go so well with smoked paprika and a bit of cayenne so if you like it spicy, add these, and perhaps some jalapeño pepper.
Eggs: I love a sunny-side-up egg on the side of my hash, but if you like scrambled, add your whisked eggs right at the end and cook for a minute, stirring all the ingredients together. Even easier, make the hash, and then pour your whisked eggs over the top and pop in the oven to make a frittata.
Meat-Free: You can skip the meat altogether, and this is just as wonderful. You could even add mushrooms if you wanted some of that umami flavor.

How can I store leftover sweet potato hash?
Let it cool. Then place it in an airtight container, and it will last 2-3 days in the refrigerator. You can either microwave it to warm it up. If you want to bring back some of the crisp, reheat in a skillet or in the oven.
Can I freeze this recipe for later?
Yes, although I don't know if you will have much left over! When you reheat it, I recommend placing it frozen in a preheated 375°F oven for about 30 minutes or until the potatoes start to crisp just a bit.
How do I scale this hash if I'm making it for a crowd?
This recipe serves 6, but can easily be made for 1 or 12. It all depends on how much sweet potato you add and how many veggies. I've made this just for myself with only 1 small sweet potato, and I've also made it for a large group using more ingredients. If you make it for a large group, here's a tip - cook the bacon, onions, and peppers together. Then mix with raw cubed sweet potatoes and place in a 375°F oven for 45 minutes or until the potatoes are soft and starting to crisp. You may want to add a bit of butter on the top to help the browning process.
