Easy

If there's one thing I'm all about, especially with these glorious summer nights, it's a delicious, healthy dinner that practically makes itself. And let me tell you, nothing, and I mean NOTHING, screams "easy summer dinner" more than a sheet pan meal!
Seriously, if you haven't jumped on the sheet pan bandwagon yet, what are you waiting for?! It's like having a magical dinner fairy in your kitchen. One pan, minimal cleanup, maximum flavor – it's basically my love language. I love to assemble this Lemon Herb Chicken Sheet Pan dinner and then pop it in the oven right before my last meeting, and when I’m done, I have a delicious dinner ready and waiting. (Plus, the house smells amazing!)

Imagine this: succulent chicken thighs, marinated in a bright, zesty lemon, oregano, and thyme concoction that just screams "summertime." Then, you toss those beautiful chicken pieces onto a single sheet pan with vibrant, tender-crisp zucchini and sweet, bursting cherry tomatoes. What spikes the flavor is using the marinade for the chicken and veggies, and then cooking everything in it. Delicious.
When it comes out of the oven, everything is perfectly cooked, infused with those fantastic lemon and herb flavors, and ready to be devoured. It's healthy, it's packed with flavor, and most importantly, it's effortless.
So next time you're staring at your fridge, wondering what to make for dinner that won't leave you feeling like you just ran a marathon, remember the magic of the sheet pan. This Lemon Herb Chicken is the perfect place to start. Trust me, your taste buds (and your dish-washing self) will thank you!
Happy cooking!
