Take your time to make this bolognese, and you will be richly rewarded. The combination of beef and pork makes this a rich and hearty dish.
You can make this ahead and then reheat it when you want to use it or keep it simmering on the stove until dinner. Your house will smell amazing. If you do decide to keep it simmering, keep an eye on it and add water so it doesn't cook down too much or burn.
If you don't eat it all, this also freezes really well. I love making a large batch, and then later, pulling a frozen portion out much later feels like a gift I left for myself.
