Key Lime Pie

This is a simple pie that you can whip up in less than 10 minutes and have ready in the fridge for a great summer dinner, guests, or celebrations.


Ingredients:


Crust:

2 cups Graham Cracker Crumbs

¼ cup Sugar

6 Tbl melted Butter

Pinch of salt


Filling:

2 cans Sweetened Condensed Milk

1 cup Plain Greek Yogurt

¾ cup Lime Juice

Zest of 2 Limes


Method:


Combine graham cracker crumbs, sugar, butter, and salt. Press into a pie plate. Refrigerate.


While the crust firms up, mix together the sweetened condensed milk, plain Greek yogurt, lime juice, and ¾ of the lime zest.


Pour filling into crust. Top with the rest of the lime zest. Refrigerate for 3 hours or overnight.


Serve as is or with whipped cream.


Notes:


You can serve this pie sooner than 3 hours and it is delicious, but your slices might be a bit messy.


This wouldn’t be a pie that you should sit out on a warm day. Keep refrigerated until ready to serve.
