This was a happy accident. When I first went to make this cottage pie, it called for regular mashed potatoes as the topping. I assumed I had potatoes when I shopped for ingredients. When I started making the pie, I realized I had sweet potatoes, not regular potatoes.
"Oh well," I said. It was too late to turn back because the filling was bubbling away on the stove. I made the sweet potato mash, popped it on the filling, and thought I would have a good dinner, but not a recipe to post.
Boy, was I wrong. The sweet potatoes added the perfect compliment to the beef filling. I couldn't get enough. Voila, a new recipe, is born.
