Herb Parmesan Soda Bread

This savory soda bread is perfect for breakfast, lunch, or dinner. Use the herbs of your choice, but I love Herbs de Provence.

Ingredients:

2 cups Flour

½ tsp Baking Soda

1 tsp Baking Powder

½ tsp Kosher Salt

2 tbsp dried Herbs de Provence (or your herbs of choice)

4 oz shredded Parmesan cheese

1 cup Buttermilk

1 Egg

Method:

Preheat the oven to 425℉ (218℃)

Mix together the buttermilk and egg. Set aside.

Mix all of the other ingredients together in a bowl. Add the buttermilk mixture.

Stir the ingredients until all the flour is moistened. This will be a wet dough.

Form into a rough ball, and transfer to a parchment-lined baking sheet. With wet hands pat the dough into a round ball.

Dust with a bit of flour and make a deep cross in the dough.

Bake for 25-35 minutes until golden brown and sounds hollow when tapped on the bottom. Remove from the oven and cool on a wire rack.

Variations:

  • For an Italian-inspired loaf consider dried oregano, basil, and garlic. Use Parmesan or even Mozzarella cheese. If you use Mozzarella, you may want to add another 1/2 teaspoon of kosher salt.

  • For a Mexican-inspired loaf consider smoked paprika, cumin, and Mexican oregano. For cheese try cheddar.

  • For an Indian-inspired loaf consider Garam Masala
